For a crowd, I make a double batch of the base recipe below and freeze it in my wooden bucket White Mountain ice cream maker. Rather than a hand crank, it has an electric motor on top and yields 4 quarts of fantastically smooth and creamy ice cream. It requires ice cubes and salt to help freeze the cream. So I plan ahead to procure those ingredients.

12 Remove the final 1/2 tablespoon of butter from the refrigerator, and place it in the center of the cross. The butter will help set the shape of the cross and keep the top of the panettone from drying out. Carefully slide the panettone, still on its sheet pan, into the oven; bake, 5 minutes. Without opening the oven door, turn the temperature down to 350; bake, 25 minutes. At this point, take a peek into the oven to check for browning. If the top is well-browned, tent a piece of foil over the panettone. If a large portion of the center is still pale, leave it uncovered, and check again in 5 minutes. When it’s done, the bread will have risen well above the panettone mold and the top will be a beautiful burnished mahogany. A cake tester inserted down into the center of the panettone should come out clean.
