Holiday flavors from Lochmead, Umpqua, Tillamook and others form another reason to celebrate the season

A recent informal query of the Eugene Foodies! Facebook group revealed strong support not only for Umpqua’s longstanding seasonal peppermint flavor, but Tillamook’s White Chocolate Peppermint Bark — a holiday-season release of white chocolate ice cream swirled with crunchy bits of peppermint candy crackle and salty-sweet peppermint bark layered with rich fudge. Introduced in 2017, the newfangled winter treat replaced Tillamook’s more traditional old Peppermint Candy flavor, which the dairy co-op retired as a seasonal release in 2013 (to the anguish of many loyalists).

More formal cocktails, however, tend to be savored over a longer period of time. For those, Van Flandern says, the goal is “very little change in the rate of dilution (over) 10 to 20 minutes, which is the average time to drink a cocktail.”

“It is the diva bread,” says Greg Wade, head baker at Publican Quality Bread in Chicago’s Fulton Market. He is referring not only to panettone’s popularity, but also to how difficult it is to nail the formula for the dough in order to achieve the bread’s proper height and gossamer texture.

For Vavyrshko, this nog goes back to his roots. “This is an enhancement on pre-bottled eggnog that we drink quite a bit of in Pennsylvania, and it’s also where I got the idea to split the spirit base.” The nog uses brandy, rum and bourbon. “The other ingredient is a spiced syrup, which is essential in holiday and/or fall cocktails,” he added. “I like to use Homeland Creamery’s Eggnog; they do a fantastic job.”
