Plenty of people have devised ways of getting around using a machine; plenty of people made ice cream before the machine was invented. The cookbook author and pastry chef David Lebovitz suggests putting your base straight into the freezer and then taking it out, every thirty minutes or so, for a good stir. Faith Durand, the editor of The Kitchn, fills a mixing bowl with ice and salt, nestles a smaller bowl inside it, then churns her base in the small bowl with a hand mixer, before freezing the whole thing. (Thomas Jefferson, an ice-cream fiend, used a similar approach.) The food-science whiz J. Kenji Lopez-Alt has a recipe that involves making a custard, combining it with fresh-whipped cream, freezing the mixture in ice-cube trays, and then food-processing the frozen cubes with more cream; it’s perfect for anyone who cares about getting her “overrun all the way down to 24%.” The popular “no-churn” technique, perhaps easiest of all, calls for a quart of heavy cream, whipped into soft peaks, and a can of condensed milk, poured into a loaf pan and left to freeze—though, as Lopez-Alt points out, this is really more of a mousse, as smooth as ice cream but with an airier, chewier texture that will be familiar to anyone who has ever enjoyed a frozen container of Cool Whip. In my mind, none of these beats the spontaneity, humble materials, and built-in upper-body workout of the plastic-bag method. It has all the appeal of a magic trick, although of course it’s not—just simple science, taking place before your very eyes. (My friend, it turned out, learned it in elementary school.)

glace luxury ice claims their product is superior because it is ‘purified of minerals additives and other pollutants.‘ the company says that its ice is of higher quality than regular ice, which is made with local tap water and may contain impurities and carcinogens, resulting in poor tasting and potentially unhealthy ice, according to the company’s website.

“An ice bath is important because we want to cool down the mixture really fast.” That’s not just putting the mixture in the fridge, explains Bauer, “but cooling it down, because milk and sugar, when they come together, they can really grow not-great microbes, so you want to get it cooled down really quickly.” The best way to do that is to pour the hot ice-cream base into a heavy ziplock bag, then submerge it in the ice bath you’ve set up in that large mixing bowl. “It cools down in 15 or 20 minutes, so you can get it ready to freeze.”

When 6sqft took a tour of Brian and Jackie’s Boerum Hill home earlier this year, we remarked how the couple carried Ample Hills’ “combination of playfulness and attention to detail” over to their personal space. And that certainly has manifested itself in an even bigger way in the Red Hook factory. With a quick look around, it feels like you’ve just walked into a child’s ice cream fantasyland. But the genius is that, though the space delivers on its kid-friendly and whimsical vibes, it also has a strong educational component and intentionally keeps the ice cream making and baking in full view.
But it’s just for a few precious months around the holidays each year when local, regional and nationwide ice cream makers fill freezer cases and scoop shops with their festive peppermint and candy-cane creations.

Kenmore Elite 79043 bottom freezer Sale price: $1,150 Discount: 45 percent CR’s take: This stainless steel Kenmore is one of the standout bottom-freezers in our ratings. It earns high marks across the board (including a rating of Excellent for energy efficiency) and falls short only in terms of usability, meaning the controls and layout could be better. While it includes an icemaker, digital controls, and spillproof shelves, it doesn’t offer much else in the way of features. If you’re looking to spend a bit less, consider the similar Kenmore 69313, also on sale at Sears. This model skips the spillproof shelves. At $900, it offers a savings of 31 percent.
